It is important to understand that flowers have a tremendous power. They beautify a dish in a simple and direct way. And they can be used everywhere. Their taste, in most species, is not capable of affecting the dish. It is wonderful, however, to see them in a hot drink, on a salad, in sweets or even on a spaghetti plate.
“Katerina came up with the idea,” Kostas tells me, and continues: “Due to his studies, he had great contact with the environment and the ecosystem in general, and the prospect of taking advantage of the property he had in Pieria was excellent. We decided to start growing herbs for many reasons. Initially, we always loved them and knew that there were some native species in the area, so we imagined that the crop could pay off. Besides, herbs are used in many ways, e.g. in decoctions or essential oils, and there is great buying interest “.
